Wine Tasting: The Setting Vineyards

  • Oak And Vine 117 East Harvard Street Glendale, CA 91205 United States (map)

The Setting: An Evening of Precision Winemaking

Founded by friends Jeff Cova, Noah McMahon, and iconic winemaker Jesse Katz, The Setting Wines is a masterclass in showcasing the distinct personality of pristine vineyard sites. Jesse Katz—famed for creating some of the most sought-after, record-breaking custom cuvées in Napa and Sonoma—crafted this portfolio to celebrate the perfect alignment of place, process, and community.

This evening is a rare opportunity to explore the range of Jesse’s precision winemaking, moving seamlessly from the crisp, volcanic structure of Oregon’s Willamette Valley to the muscular, deeply concentrated terroir of Sonoma and Napa's premier Cabernet blocks.

The Exclusive Pour List

  • The Setting Sauvignon Blanc Barrel Fermented 2023 (Sonoma County)

    • Tasting Note: Sourced from a unique vineyard site sitting just below The Madrona hotel off Westside Road. Fermented in barrels sourced from Chateau Haut Brion in Bordeaux to achieve distinct minerality and spice, delivering a medium-bodied, weightless feel with a long, gorgeous finish.

  • The Setting Pinot Noir 2023 (Chehalem Mountain Vineyard, Oregon)

    • Tasting Note: Sourced entirely from the prestigious Chehalem Mountain Vineyard in Oregon, highlighting the bright, focused fruit profile and refined structure characteristic of this premier cool-climate site.

  • The Setting Cabernet Sauvignon 2022 (Alexander Valley)

    • Tasting Note: Sourced primarily from the high-elevation Battle Family Vineyard at the top of Chalk Hill Road. Sourced from cooler vineyard sites to yield concentrated yet elegant layers of red currants, cassis, and vanilla balanced by ultra-powdery tannins and juicy acidity.

  • The Setting Cabernet Sauvignon 2021 (Oakville)

    • Tasting Note: Sourced from Skellenger Vineyard, a hidden gem property nestled directly beside Screaming Eagle. This wine delivers the rich volume and concentration of the Oakville valley floor blended seamlessly with the powerful elegance and structure of hillside fruit.

  • The Setting Cabernet Sauvignon 2021 (Rockpile Ridge Vineyard)

    • Tasting Note: Grown high above the Dry Creek Valley floor overlooking Lake Sonoma in volcanic, rocky soils. A bold, mountain Cabernet that is intense, powerful, and broody, displaying deep notes of dried herbs, ripe red and black fruits, baker's chocolate, and a kiss of vanilla.
