As the California summer heat settles into Glendale, the instinct is often to reach for something light, crisp, and predictable. However, true cocktail craft lies in challenging that convention. In this installment of The Cocktail Craft, we look at our first featured creation—a drink designed to deliver profound complexity without losing the refreshing, effervescent lift required for a warm afternoon on the patio.
We call it Quarter Past Midnight.
At $22, this drink is a masterclass in structural balance, anchored by a legendary Islay single malt and brightened by a carefully curated cast of botanical and tropical modifiers.
The Breakdown
The Spirit — Bowmore 15-Year Scotch: Bowmore holds the distinction of housing Islay’s oldest maturation warehouse, and their 15-Year expression is a masterclass in wood management. Matured in ex-bourbon casks before finishing its final three years in European Oloroso sherry casks, it offers a remarkably balanced profile. It trades the aggressive, medicinal punch of typical Islay whiskies for a gentle, elegant wisp of coastal peat smoke, layered with rich notes of dark chocolate, raisins, and sun-baked dates.
The Modifiers: To transform a rich, peaty scotch into a bright summer sipper, we introduce a brilliant counter-balance. Guava Purée provides a velvety, tropical sweetness, while fresh Lemon offers essential acidity. From there, we introduce an editorial layer of complexity using classic European apéritifs and liqueurs: Lillet Blanc adds a crisp, floral wine base; Triple Sec injects a bright, candied orange note; and a precise touch of Green Chartreuse contributes an intriguing, herbaceous backbone of alpine botanicals.
The Serve: Shaken and served long with a Splash of Soda, the carbonation stretches the dense tropical and smoky flavors, turning a heavy spirit profile into a completely refreshing, high-acid highball experience.
Flavor Profile: What to Expect
On the nose, you are met with a captivating contrast—a gentle hint of bonfire smoke mingled with sweet, tropical fruit.
The first sip is a revelation of texture and flavor progression: the lush richness of the guava and the bright citrus of the lemon hit the palate first, immediately followed by the herbal complexity of the Chartreuse. The experience rounds out on the finish, where the elegant, woody smoke and sherry sweetness of the Bowmore 15-Year linger subtly behind a crisp, clean, effervescent finish. It is smoky, tropical, herbaceous, and exceptionally bright all at once.
